“老壇子泡菜制作技藝”起源于1902年,經(jīng)歷家族四代傳承,2018年被列入四川省非物質(zhì)文化遺產(chǎn)保護(hù)名錄。第四代傳承人何艷平于2010年創(chuàng)辦四川老壇子食品有限公司。并于2019年評為四川省非物質(zhì)文化遺產(chǎn)項(xiàng)目體驗(yàn)基地,2020年評為眉山市中小學(xué)生研學(xué)實(shí)踐教育基地,2023年評為首批四川省優(yōu)秀非遺工坊。

四川老壇子食品有限公司位于中國四川眉山泡菜城,占地面積115畝,員工近700人。2024年公司產(chǎn)值2.52億元,入庫稅金2544萬元。公司已通過HACCP、ISO9001、ISO14001、ISO22000、ISO45001等管理體系認(rèn)證,獲得省級農(nóng)業(yè)產(chǎn)業(yè)化重點(diǎn)龍頭企業(yè)、省級企業(yè)技術(shù)中心、省級返鄉(xiāng)創(chuàng)業(yè)明星企業(yè)、眉山市東坡區(qū)優(yōu)秀民營企業(yè)、眉山市綠色工廠等榮譽(yù)。

老壇子作為“四川泡菜”的典型代表,以傳承和發(fā)揚(yáng)傳統(tǒng)泡菜文化為己任,深入挖掘傳統(tǒng)泡菜制作技藝精髓,堅(jiān)持老母水古法發(fā)酵工藝,選好食材,做好泡菜。以泡菜為原料,研發(fā)定制高品質(zhì)泡菜和標(biāo)準(zhǔn)化川味調(diào)料,助力中國餐飲,讓中國味道走向世界。

The Lao Tan Zi Paocai-Making Technique originated in 1902 and has been passed down through four generations of the He family. It was listed in the Sichuan Provincial Intangible Cultural Heritage Protection Directory in 2018. The fourth-generation inheritor, He Yanping, founded Sichuan Lao Tan Zi Food Co., Ltd. in 2010. In 2019, it was named a Sichuan Provincial Intangible Cultural Heritage Project Experience Base; in 2020, it was recognized as a Meishan City Primary and Secondary School Students Research and Practice Education Base; and in 2023, it was selected as one of the first batches of Sichuan Provinces Outstanding Intangible Cultural Heritage Workshops.

Sichuan Lao Tan Zi Food Co., Ltd. is located in Meishan City, Sichuan Province, China, covering an area of 115 acres with nearly 700 employees. In 2024, the company achieved a production value of 252 million RMB and paid taxes of 25.44 million RMB. The company has passed HACCP , ISO9001, ISO14001, ISO22000,and ISO45001 management system certifications, and has received honors such as the provincial key leading agricultural enterprise, provincial enterprise technology center, provincial returning entrepreneurship star enterprise, outstanding private enterprise in Dongpo District of Meishan City, and Meishan City Green Factory.

As a typical representative of Sichuan Paocai (pickle), Lao Tan Zi is dedicated to inheriting and promoting traditional Paocai culture. We delve into the essence of traditional Paocai-making techniques, adhere to the ancient method of fermenting with aged brine, select high-quality ingredients, and produce excellent Paocai. Additionally, using Paocai as the raw material, we develop customized high-quality Paocai and standardized Sichuan seasonings, providing support for the Chinese catering industry and bringing Chinese flavors to the world arena.
